Instant Pot Spanish Rice

Spanish Rice Instant Pot
Ingredients
- 1 tbsp unsalted butter
- 1 tbsp vegetable oil
- 1 medium yellow onion peeled and chopped
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1 clove garlic peeled and minced
- 2 tbsp tomato paste
- 2 cups long grained rice
- 3 1/2 cups chicken broth
- 1 cup frozen peas
Instructions
- Press sauté on instant pot. Once machine indicates hot, add butter and oil, once butter is melted, about 30 seconds add onion. Cook, stirring often, 3 minutes
- Add cumin and salt to pot and cook until cumin is fragrant, about 30 seconds. Press cancel on sauté. Add remaining ingredients and stir well. Close lid and allow any steam to releaseFor cooking the rice select white rice setting on instant pot with instant pot sealed. When finished cooking release steam.
