Swedish Pancakes
Ingredients
- 4 eggs
- 1/8 tsp salt
- 1 tsp sugar
- 2 1/2 cups flour
- 3 1/2 cups milk
Instructions
- beat 4 eggs with salt and sugar and 1/4 cup of the milk. for best results use a good whisk
- add 2 more 1/4 cups of milk and a 1/4 cup of flour and mix until mixed into batter
- slowly add flour 1/4 cup at a time and mixkeep adding flour to get batter thicker (this helps remove lumps)when the batter seems to thick (prior to making dough) add two more 1/4 cups of milk and then repeat adding flour 1/4 cup at a time. Once all the flour is mixed in and no lumps finish adding the milkLet batter sit to finish absorbing any lumps. Usually by time you clean up the dishes and get the griddle ready the batter is ready. Whisk a bit if needed.
