Ingredients

  • 40 oz cherry tomatoes, halved
  • 1 cup fresh basil, chopped
  • 3 garlic cloves, finely diced
  • Olive Oil (enough to drizzle generously)
  • Salt & freshly cracked black pepper
  • Orzo Pasta, cooked al dente
  • Goat Cheese, crumbled
  • Pine Nuts, lightly toasted in the oven
  • Grilled Italian sausage, sliced. I love Polodori Italian Sausage

Instructions

Step 1: Roast the Tomatoes

Preheat your oven to 400°F (200°C). Place the halved cherry tomatoes in a glass casserole dish. Sprinkle with chopped basil and garlic. Drizzle generously with olive oil and season with salt and pepper and stir. Roast for 30–40 minutes, or until the tomatoes have cooked down and most of their moisture has evaporated. They should look slightly shriveled but still juicy. Stir occasionally while they are cooking down.

Step 2: Prepare the Orzo

While the tomatoes roast, cook your orzo according to package directions. Drain and set aside.

Step 3: Assemble the Dish

Spoon the roasted tomato mixture over the orzo. Sprinkle with crumbled goat cheese and toasted pine nuts. Add sliced grilled Italian sausage on the side (or on top if you want it all mixed together).
