Dutch Oven Beef Stew

Make Ahead Beef Stew
This Dutch Oven Beef Stew is a family favorite, especially during the colder months. It’s the perfect make-ahead meal—just prepare it earlier in the day, then pop it in the oven when you’re ready to cook. Everyone always raves about this dish!
Made with simple, wholesome ingredients, this stew is rich, comforting, and full of deep, savory flavors.
Ingredients for Stew
- 6 tbsp olive oil
- 2 lbs stew meat
- Salt & pepper to taste
- 1 red onion, diced
- 3 white onions, diced
- 3 garlic cloves, minced
- 4 slices cooked bacon, chopped
- 2 fresh tomatoes, diced
- 1 (14.5 oz) can tomato sauce
- 3 cups (24 oz) beef broth
- 2 tbsp brown sugar
- 1 tbsp dried thyme
- 1 tbsp dried oregano
- 1 ½ lbs baby new potatoes, halved

- Dutch Oven Oval
Ingredients
- 6 tbsp olive oil
- 4 slices baked in oven ahead of time and diced up
- 2 lbs stew meet ( this time I used tip steak)
- salt to season meat
- pepper to season meat
- 3 yellow onions sliced
- 1 red onion sliced
- 3 cloves garlic diced
- 1 14.5 oz can tomato sauce
- 2 fresh tomatoes diced
- 24 oz beef broth
- 2 tbsp brown sugar
- 1 tbsp dried thyme
- 1 tbsp dried oregano
- 1 pounds baby new potatoes cut in half
Instructions
- cook bacon ahead of time and dice
- place stew meat and three tbsp olive oil in dutch oven. season with salt and pepper and brown meat. Remove meat and set aside
- place 3 tbs olive oil in dutch oven add onions and garlic. Saute until slightly brown stirring contantly (it wont be carmalized)
- place meat and bacon back in dutch oven with onions
- add remaining ingredients (except potatoes)
- stir and put in the refrigeratr until ready to cook
- Bake covered at 350 degrees 2 hours
- after 2 hours add baby potatoes and cook additional 30 min. Stir and continue to cook covered
- if starts to get to dry and more beef broth
