- 2 tbsp olive oil
- 2 tbsp fresh thyme or rosemary (or 1 tsp dried)
- 2-3 garlic cloves, smashed (optional)
- Salt and pepper, to taste
- 1 tbsp honey, balsamic vinegar (optional, for a touch of sweetness). or balsamic reduction that is what I use. You can buy it premade at the grocery store Alessi Balsamic reduction
- Fresh parsley (optional, for garnish)
Instructions for Oven Roasted Rainbow Carrots:
- Preheat your oven:
Set the oven to 400°F (200°C). - Prepare the carrots:
Scrub the rainbow carrots thoroughly. Trim the tops, leaving about 1-2 inches of the stems. pat dry if wet. If the carrots are thick, slice them in half lengthwise for even cooking. - Season the carrots:
Place the carrots on a baking sheet. Use parchment paper to line the pan for easier cleanup. Drizzle with olive oil, then season with salt, pepper, and fresh thyme or rosemary. Add smashed garlic cloves if desired for extra flavor. - Roast the carrots:
