Experiencing Kölsch Beer in Cologne

Cologne offers no shortage of unforgettable sights none more striking than its soaring cathedral but one of our favorite memories came not from looking up, but from sitting down with a glass of Kölsch.

Kölsch is served in skinny little glasses called Stangen, and watching the system in action is half the fun. The servers move quickly through the room with small, round trays, hardly able to fill the glasses fast enough before they’re whisked away and delivered to waiting guests. There’s no asking if you’d like another beer when your glass gets low, a fresh one simply appears in front of you.

Instead of a bill running behind the bar, they keep track of how many beers you’ve had by placing a small check mark on a paper coaster at your table. Each line represents another Kölsch enjoyed. When you’ve had enough, you don’t flag anyone down you simply place the coaster on top of your glass, the universal signal that you’re finished.

The glasses themselves are intentionally small, and it turns out that’s part of the genius. Because there’s less beer in each glass, it stays cold from the first sip to the last crisp, refreshing, and perfectly suited for lingering conversations and hearty food.



We tried Kölsch at both Früh am Dom and Päffgen Brauerei, and both were excellent. The beer was light and clean, and the food was just as memorable, classic, comforting, and exactly what you want alongside a steady rotation of fresh Kölsch.
It’s a rhythm you quickly fall into sip, chat, laugh, glance down to see another mark added to your coaster. Simple, communal, and unmistakably Cologne.
