Clementine Orange Salad

Some recipes don’t need to be measured, perfected, or overthought. This is one of those.
It’s the kind of salad you throw together in a few minutes, adjusting as you go, and somehow it always turns out beautifully. Fresh, bright, and just a little unexpected.
Inspired by a trip to Sicily, this salad always gets noticed.
Why I Love This Salad
It’s almost impossible to mess up, no measuring required, comes together in minutes. It is fresh, light, and perfect alongside almost anything. You can make it year round, but is especially good in winter when citrus is at its best.
It’s one of those recipes you end up memorizing without ever writing down.
Ingredients
(Use as much or as little as you like)
-Clementine or mandarin oranges
-Sliced red onion
-Chopped fresh parsley
-Olive oil
-Sea salt
-Freshly ground black pepper
How to Make It
Start by layering sliced clementine oranges on a plate or shallow bowl.
Scatter a small amount of thinly sliced red onion over the top. You don’t need much, just enough to add a little bite.
Sprinkle with freshly chopped parsley.
Drizzle lightly with olive oil, then finish with a pinch of sea salt and a few turns of black pepper.
That’s it.
How I Serve It
This salad works beautifully alongside grilled chicken, fish, or beef. As a light starter before dinner, on a winter table when you want something fresh, as part of a simple lunch. I even like it with pasta carbonara. It really does well with everything.
A Simple Favorite
This isn’t a recipe you need to follow exactly. It’s one you make your own.
And sometimes those are the ones you come back to the most.
