Ground Turkey Lettuce Wraps

These ground turkey lettuce wraps are inspired by the kind you’d find at a good Asian restaurant—savory ground turkey with garlic, ginger, hoisin, and a little soy, all tucked into crisp lettuce leaves. They’re light but satisfying, and they come together in under 30 minutes.
You can serve them as an appetizer, or make it a full meal by adding rice or extra veggies on the side.
Ingredients
For the filling:
- 1 tablespoon sesame oil (or any neutral oil)
- 1 pound ground turkey
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated (or 1 tsp ground ginger)
- 1/2 small onion, finely diced
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha or chili garlic sauce (optional, for heat)
- 1/2 cup water chestnuts, finely chopped (optional, for crunch)
- 2 green onions, sliced
To serve:
- 1 head butter lettuce or Bibb lettuce (washed and separated into leaves)
- Chopped peanuts or cashews
- Extra green onions or shredded carrots for garnish
Instructions for Ground Turkey Lettuce Wraps
- Heat oil in a large skillet over medium heat. Add diced onion and cook for 2–3 minutes until softened.
- Add garlic and ginger, stir until fragrant, about 30 seconds.
- Add ground turkey, breaking it up with a spoon. Cook until browned and fully cooked through, about 6–8 minutes.
- Stir in hoisin sauce, soy sauce, rice vinegar, and sriracha if using. Add chopped water chestnuts and cook another 2 minutes until everything is coated and warmed through.
- Remove from heat and stir in sliced green onions.
- Spoon mixture into lettuce leaves. Garnish with chopped peanuts and extra green onions if desired. Serve immediately.
Serving Suggestions
- Add steamed rice or rice noodles on the side, or I like a frozen egg roll like Chungs
- Serve with cucumber slices or a quick pickled veggie mix
- For a heartier version, top with a fried egg
