These ground turkey lettuce wraps are inspired by the kind you’d find at a good Asian restaurant—savory ground turkey with garlic, ginger, hoisin, and a little soy, all tucked into crisp lettuce leaves. They’re light but satisfying, and they come together in under 30 minutes.

You can serve them as an appetizer, or make it a full meal by adding rice or extra veggies on the side.

Ingredients

For the filling:

  • 1 tablespoon sesame oil (or any neutral oil)
  • 1 pound ground turkey
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated (or 1 tsp ground ginger)
  • 1/2 small onion, finely diced
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha or chili garlic sauce (optional, for heat)
  • 1/2 cup water chestnuts, finely chopped (optional, for crunch)
  • 2 green onions, sliced

To serve:

  • 1 head butter lettuce or Bibb lettuce (washed and separated into leaves)
  • Chopped peanuts or cashews
  • Extra green onions or shredded carrots for garnish

Instructions for Ground Turkey Lettuce Wraps

  1. Heat oil in a large skillet over medium heat. Add diced onion and cook for 2–3 minutes until softened.
  2. Add garlic and ginger, stir until fragrant, about 30 seconds.
  3. Add ground turkey, breaking it up with a spoon. Cook until browned and fully cooked through, about 6–8 minutes.
  4. Stir in hoisin sauce, soy sauce, rice vinegar, and sriracha if using. Add chopped water chestnuts and cook another 2 minutes until everything is coated and warmed through.
  5. Remove from heat and stir in sliced green onions.
  6. Spoon mixture into lettuce leaves. Garnish with chopped peanuts and extra green onions if desired. Serve immediately.

Serving Suggestions

  • Add steamed rice or rice noodles on the side, or I like a frozen egg roll like Chungs
  • Serve with cucumber slices or a quick pickled veggie mix
  • For a heartier version, top with a fried egg
